Description

Boston Cream Pie Cookies are a delightful twist on the classic dessert, featuring soft vanilla cookies filled with creamy custard and topped with a smooth chocolate glaze.


Ingredients

  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 tablespoon cornstarch
  • ½ cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter (for glaze)

Instructions

  1. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually mix dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  6. Bake for 10–12 minutes until edges are golden and centers are soft. Let cool on sheet for a few minutes, then transfer to a wire rack.
  7. In a small saucepan, heat heavy cream and powdered sugar over medium heat. Stir in cornstarch and vanilla extract. Whisk constantly until thick and bubbly, then let cool.
  8. Once cookies and filling are cool, turn half the cookies upside down and pipe or spoon filling onto them. Top with remaining cookies to make sandwiches.
  9. In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth.
  10. Drizzle or spread the glaze over each sandwich cookie and let set before serving.
