- ¼ cup powdered sugar

- 2 tablespoons unsalted butter (for glaze)
Instructions
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into the wet ingredients until just combined. Do not overmix.
- Preheat oven to 350°F (175°C). Scoop dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes until edges are golden and centers are soft. Let cool on sheet for a few minutes, then transfer to a wire rack.
- In a small saucepan, heat heavy cream and powdered sugar over medium heat. Stir in cornstarch and vanilla extract. Whisk constantly until thick and bubbly, then let cool.
- Once cookies and filling are cool, turn half the cookies upside down and pipe or spoon filling onto them. Top with remaining cookies to make sandwiches.
- In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth.
- Drizzle or spread the glaze over each sandwich cookie and let set before serving.

- Chill cookie dough for 30 minutes if cookies spread too much.
