Description

Breakfast Fruit and Yogurt Pizza is a fresh and colorful breakfast dish featuring a crunchy granola crust, a tangy cream cheese yogurt layer, and an assortment of vibrant fruits. It’s a perfect combination of crunchy, creamy, and juicy textures, ideal for a wholesome morning meal or a brunch centerpiece.

Ingredients

Scale
  • 2 cups Strawberry Almond Granola without craisins (about 8 ounces)
  • 8 ounces Whipped Mixed Berry Cream Cheese
  • 1 carton (5.3 ounces) Vanilla Greek Yogurt
  • 1/2 teaspoon Lemon Zest
  • 1 tablespoon Lemon Juice
  • 1 Mango, peeled and sliced
  • 1 pint Strawberries, sliced
  • 1 pint Blackberries, sliced
  • 1 1/2 cups Grapes, sliced
  • 1 pint Raspberries

Instructions

  1. Preheat the oven according to the instructions for the granola.
  2. Line a pizza stone or pan with parchment paper and press the granola into a thick circular crust shape with thicker edges.
  3. Bake the granola crust according to its recipe instructions until firm but slightly chewy. Allow it to cool completely on a wire rack.
  4. In a mixing bowl, combine whipped mixed berry cream cheese, vanilla Greek yogurt, lemon zest, and lemon juice. Mix until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the cooled granola crust, avoiding the outer edges.
  6. Decorate the top with sliced mango, strawberries, blackberries, grapes, and raspberries in a visually appealing pattern.
  7. Serve immediately or refrigerate for up to six hours before serving.

Notes

  • Use coconut-based yogurt and cream cheese for a dairy-free version.
  • Try different granola flavors for variety in crust taste.
  • Seasonal fruits like peaches, kiwi, or a fruit puree can be used for different flavors.
  • Refrigerate for a few hours before serving for a firmer texture and cooler taste.
