  • 2 cups fresh peaches, diced (about 3 medium peaches)
  • 1 cup brown sugar (packed)
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Brown the butter in a medium saucepan over medium heat until golden brown and nutty.
  2. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a large bowl, mix the brown sugar and browned butter, then add vanilla extract.
  4. In a separate bowl, whisk together flour, oats, cinnamon, baking soda, and salt, then combine with the wet ingredients.
  5. Gently fold in the diced peaches.
  6. Drop rounded portions of dough onto the baking sheet, spacing them 2 inches apart.
  7. Bake for 12-15 minutes until edges are golden brown and centers are set.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
