Instructions
- Brown the butter in a medium saucepan over medium heat until golden brown and nutty.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the brown sugar and browned butter, then add vanilla extract.
- In a separate bowl, whisk together flour, oats, cinnamon, baking soda, and salt, then combine with the wet ingredients.
- Gently fold in the diced peaches.
- Drop rounded portions of dough onto the baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes until edges are golden brown and centers are set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
