Brown Sugar Cinnamon Pop Tart Bars are a homemade twist on the nostalgic treat, featuring a buttery crust, gooey brown sugar cinnamon filling, and a sweet icing drizzle.

- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- ½ cup granulated sugar
- ½ teaspoon salt
- 1 egg yolk
- 4 tablespoons ice water
- 1 cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 2 tablespoons all-purpose flour (for filling)
- 1 teaspoon vanilla extract (for filling)
- 1 tablespoon cold water
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract (for icing)
Instructions
- In a large bowl, mix flour and salt. Add butter and blend until crumbly. Stir in sugar.
- Whisk egg yolk and ice water in a small bowl, then add to the flour mixture until dough forms. Divide into 2 disks, wrap, and chill for 1 hour.
- Mix brown sugar, cinnamon, and flour in a bowl. Stir in vanilla and cold water to form a paste. Set aside.
- Preheat oven to 350°F (175°C). Roll out one dough disk to ¼-inch thick. Cut into 3×4 inch rectangles.
- Place half of the rectangles on a parchment-lined baking sheet. Add filling to each. Top with remaining dough rectangles and seal edges. Crimp with a fork if desired.
- Bake for 15–20 minutes until golden brown. Cool for 10 minutes on the sheet, then transfer to a wire rack.
- Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bars.
- Once icing sets, cut into squares and serve warm or at room temperature.
Notes
- For a dairy-free version, use vegan butter and dairy-free milk.
- Use a 1:1 gluten-free flour blend to make these gluten-free.
- Try flavor variations like almond or maple extract, or lemon zest for a twist.
- Chopped nuts can be added for extra texture in the filling.
