  • 2 cups granulated sugar
  • 1/2 teaspoon baking powder

  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together cocoa powder, flour, baking powder, and salt.
  3. In a separate bowl, mix melted butter, granulated sugar, eggs, and vanilla extract until combined.
  4. Gradually add dry ingredients to the wet ingredients and mix until fully incorporated. Fold in chocolate chips if using.
  5. Drop spoonfuls of batter onto baking sheets, spacing 2 inches apart. Bake for 15–20 minutes, until edges are set and centers are slightly soft.
  6. Cool cookies on the sheet for 10 minutes before transferring to a wire rack.
  7. To make the filling, cream together softened butter, brown sugar, and granulated sugar.
  8. Mix in vanilla extract, flour, and salt until smooth. Fold in chocolate chips.
  9. Spread a generous amount of cookie dough filling on the flat side of one cooled brownie cookie and sandwich with another. Repeat for all.
  10. Optional: Refrigerate assembled cookies for 30 minutes for a firmer texture.

  • Chill the dough slightly if cookies spread too much during baking.
