Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together cocoa powder, flour, baking powder, and salt.
- In a separate bowl, mix melted butter, granulated sugar, eggs, and vanilla extract until combined.
- Gradually add dry ingredients to the wet ingredients and mix until fully incorporated. Fold in chocolate chips if using.
- Drop spoonfuls of batter onto baking sheets, spacing 2 inches apart. Bake for 15–20 minutes, until edges are set and centers are slightly soft.
- Cool cookies on the sheet for 10 minutes before transferring to a wire rack.
- To make the filling, cream together softened butter, brown sugar, and granulated sugar.
- Mix in vanilla extract, flour, and salt until smooth. Fold in chocolate chips.
- Spread a generous amount of cookie dough filling on the flat side of one cooled brownie cookie and sandwich with another. Repeat for all.
- Optional: Refrigerate assembled cookies for 30 minutes for a firmer texture.
