- 1 box brownie mix (plus ingredients required for preparation, usually eggs, oil, and water)
- 8 oz cream cheese, softened
- 8 oz mascarpone cheese
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup espresso, strongly brewed and cooled
- 1/4 cup cocoa powder (plus extra for dusting)
- 1 teaspoon vanilla extract
- 1 cup heavy cream, cold
Instructions
- Preheat your oven to 350°F (175°C). Prepare the brownie mix according to the package instructions, then pour the batter into a greased 9-inch springform pan. Spread it evenly and bake for about 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow it to cool completely in the pan.
- In a large mixing bowl, combine the softened cream cheese and mascarpone cheese. Beat with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar, mixing until well combined. Then, add the eggs one at a time, mixing well after each addition. Pour in the cooled espresso, cocoa powder, and vanilla extract. Mix until everything is well combined and smooth.
- Pour the cheesecake filling over the cooled brownie crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- After the hour, remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover it with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Dust with cocoa powder for a finishing touch. Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.
Notes
- Store any leftover cheesecake in the refrigerator, covered with plastic wrap or in an airtight container. It will stay fresh for up to 5 days.
- For best results, do not freeze the cheesecake, as it may alter the texture.
- If your cheesecake cracks, cover it with whipped cream or chocolate sauce to hide imperfections.
