  • 1 box brownie mix (plus ingredients required for preparation, usually eggs, oil, and water)
  • 8 oz cream cheese, softened
  • 8 oz mascarpone cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup espresso, strongly brewed and cooled
  • 1/4 cup cocoa powder (plus extra for dusting)
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the brownie mix according to the package instructions, then pour the batter into a greased 9-inch springform pan. Spread it evenly and bake for about 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow it to cool completely in the pan.
  2. In a large mixing bowl, combine the softened cream cheese and mascarpone cheese. Beat with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Gradually add the granulated sugar, mixing until well combined. Then, add the eggs one at a time, mixing well after each addition. Pour in the cooled espresso, cocoa powder, and vanilla extract. Mix until everything is well combined and smooth.
  3. Pour the cheesecake filling over the cooled brownie crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  4. After the hour, remove the cheesecake from the oven and let it cool to room temperature. Once cooled, cover it with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Dust with cocoa powder for a finishing touch. Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.

Notes

  • Store any leftover cheesecake in the refrigerator, covered with plastic wrap or in an airtight container. It will stay fresh for up to 5 days.
