- 2 chicken breasts (about 500g)
- 2 cups diced tomatoes (fresh)
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil (plus more for grilling)
- 2 medium zucchinis (spiralized into noodles)
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and pepper to taste. Mix well and set aside.
- Pat the chicken breasts dry with paper towels. Brush both sides with olive oil and season generously with salt and pepper.
- Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, or until cooked through. Let it rest before slicing.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the spiralized zucchini noodles and sauté for about 2-3 minutes until slightly tender. Season with salt and pepper.
- On a plate, create a nest of zucchini noodles, place sliced chicken on top, and spoon the bruschetta mixture over the chicken.
