Ingredients

  • 2 chicken breasts (about 500g)
  • 2 cups diced tomatoes (fresh)
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil (plus more for grilling)
  • 2 medium zucchinis (spiralized into noodles)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and pepper to taste. Mix well and set aside.
  2. Pat the chicken breasts dry with paper towels. Brush both sides with olive oil and season generously with salt and pepper.
  3. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, or until cooked through. Let it rest before slicing.
  4. In a large skillet, heat a drizzle of olive oil over medium heat. Add the spiralized zucchini noodles and sauté for about 2-3 minutes until slightly tender. Season with salt and pepper.
  5. On a plate, create a nest of zucchini noodles, place sliced chicken on top, and spoon the bruschetta mixture over the chicken.
