- 1/2 cup packed brown sugar
- 1/4 cup unsalted butter
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
- Pinch of salt
- 1/2 cup additional whipped cream (for folding)
Instructions
- In a small bowl, sprinkle the gelatin over cold water and let it bloom for 5 minutes until it becomes jelly-like.
- In a saucepan over medium heat, combine brown sugar, butter, milk, and salt. Stir until smooth and bubbling. Cook for 2 more minutes, then remove from heat.
- Add the bloomed gelatin to the warm butterscotch mixture and stir until fully dissolved. Mix in vanilla extract and allow to cool slightly.
- Whip the heavy cream in a large bowl until soft peaks form. Fold in the cooled butterscotch mixture gently until fully incorporated.
- Spoon the mousse into serving dishes. Refrigerate for at least 4 hours or overnight until set. Serve chilled.
