Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups corn (fresh, frozen, or canned)
  • 1 large bell pepper, diced (any color)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prepare the ingredients by peeling and deveining the shrimp, dicing the bell pepper and onion, and mincing the garlic.
  2. Heat the olive oil in a large skillet over medium-high heat for about 1 minute.
  3. Add the diced onion and bell pepper to the skillet and sauté for 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the corn and cook for another 2-3 minutes.
  6. Toss the shrimp with Cajun seasoning, salt, and pepper in a bowl.
  7. Push the vegetable mixture to one side of the skillet and add the seasoned shrimp to the other side, cooking for 3-4 minutes until pink and opaque.
  8. Mix everything together in the skillet, taste, and adjust seasoning if necessary.
  9. Garnish with fresh parsley and serve warm with lemon wedges.
