- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon (plus extra for dusting)
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/2 cup caramel sauce (plus extra for drizzling)
Instructions
- Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners or lightly grease it with cooking spray.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until evenly coated and press into the bottom of each muffin cup.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar, then add the eggs one at a time, mixing well. Stir in the vanilla extract and ground cinnamon.
- Pour the cheesecake filling over the crusts, filling each cup about 2/3 full. Drizzle caramel sauce on top and swirl it into the mixture.
- Bake for 18-20 minutes, until the edges are set and the centers are slightly jiggly. Let cool for 10 minutes.
- Transfer to the refrigerator to chill for at least 2 hours, or until fully set.
- Once chilled, remove the cheesecake cups from the liners. Dust the tops lightly with additional ground cinnamon and drizzle with extra caramel sauce before serving.
