  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 2 ripe bananas, sliced
  • ¼ cup brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Mix until well combined.
  2. Press the crumb mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes until lightly golden. Let cool.
  3. In a large bowl, beat cream cheese, granulated sugar, and a pinch of salt until smooth and creamy. Add eggs one at a time, mixing well after each. Mix in vanilla extract, mashed bananas, and lemon juice until just combined.
  4. Pour the filling into the cooled crust and smooth the top. Bake for 45–50 minutes, until edges are set and center slightly jiggles. Turn off oven, crack the door, and let sit for 1 hour. Cool to room temperature, then refrigerate at least 4 hours or overnight.
  5. In a skillet over medium heat, melt butter. Add sliced bananas, brown sugar, and cinnamon. Cook for 3–5 minutes, stirring gently until caramelized. Remove from heat and let cool slightly.
  6. Top the chilled cheesecake with the caramelized banana mixture before serving.
