- 4 thick slices of brioche bread
- 2 ripe bananas, sliced
- 3 large eggs
- 1 cup milk (whole or 2%)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar (plus extra for caramelizing bananas)
- 3 tablespoons butter (for cooking)
- Powdered sugar for dusting (optional)
Instructions
- In a large mixing bowl, whisk together the eggs, milk, ground cinnamon, vanilla extract, and 2 tablespoons of brown sugar until well combined.
- Dip each slice of brioche bread into the egg mixture, allowing it to soak for about 30 seconds on each side.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the soaked brioche slices to the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
- In the same skillet, add the remaining tablespoon of butter, then add the sliced bananas and sprinkle with extra brown sugar. Cook for about 2-3 minutes until caramelized.
- Return the brioche slices to the skillet and arrange the caramelized bananas on top.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
- Reheat in the microwave for about 30 seconds or until heated through.
- Use day-old bread for better absorption of the egg mixture.
