Instructions
- Start by pitting the Medjool dates if they are not already pitted. Place the dates in a bowl and soak them in warm water for about 10 minutes to soften, then drain.
- In a food processor, add the raw cashews and pulse until they are finely chopped but not turned into a powder.
- Add the soaked dates, ground cardamom, honey, and a pinch of sea salt to the food processor with the chopped cashews. Blend until the mixture is well combined and sticky.

- Place the shredded coconut in a shallow dish. Roll each ball in the shredded coconut until they are well coated.
