  • 1 cup raw cashews
  • 1 teaspoon ground cardamom
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • A pinch of sea salt

Instructions

  1. Start by pitting the Medjool dates if they are not already pitted. Place the dates in a bowl and soak them in warm water for about 10 minutes to soften, then drain.
  2. In a food processor, add the raw cashews and pulse until they are finely chopped but not turned into a powder.
  3. Add the soaked dates, ground cardamom, honey, and a pinch of sea salt to the food processor with the chopped cashews. Blend until the mixture is well combined and sticky.
  4. Use your hands to scoop out small portions (about 1 tablespoon each) and roll them into balls.
  5. Place the shredded coconut in a shallow dish. Roll each ball in the shredded coconut until they are well coated.
  6. Place the finished date balls on a plate or in an airtight container and refrigerate for at least 30 minutes to firm up.
