Description

Ingredients

  • 2 cups all-purpose flour (250 grams)
  • 1 cup unsalted butter, softened (226 grams)
  • 1 cup granulated sugar (200 grams)
  • 1/4 teaspoon saffron threads
  • 1 teaspoon ground cardamom
  • 1/2 cup chopped pistachios (75 grams)
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 tablespoon milk (optional, for adjusting dough consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, combine the saffron threads with 1 tablespoon of warm water and let it steep for about 10 minutes.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Pour the saffron infusion into the butter-sugar mixture, add ground cardamom and a pinch of salt, and mix until well combined.
  5. In a separate bowl, whisk together the all-purpose flour and baking powder, then gradually add to the wet ingredients, mixing until just combined. Add milk if the dough is too dry.
  6. Gently fold in the chopped pistachios until evenly distributed.
  7. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten each ball slightly.
  8. Bake for 12-15 minutes, or until the edges are golden brown and the centers are set but still soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Enjoy the cookies warm or at room temperature.
