- 1 cup unsalted butter, softened (226 grams)
- 1 cup granulated sugar (200 grams)
- 1/4 teaspoon saffron threads
- 1 teaspoon ground cardamom
- 1/2 cup chopped pistachios (75 grams)
- 1 teaspoon baking powder
- A pinch of salt
- 1 tablespoon milk (optional, for adjusting dough consistency)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, combine the saffron threads with 1 tablespoon of warm water and let it steep for about 10 minutes.
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Pour the saffron infusion into the butter-sugar mixture, add ground cardamom and a pinch of salt, and mix until well combined.
- In a separate bowl, whisk together the all-purpose flour and baking powder, then gradually add to the wet ingredients, mixing until just combined. Add milk if the dough is too dry.
- Gently fold in the chopped pistachios until evenly distributed.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten each ball slightly.
- Bake for 12-15 minutes, or until the edges are golden brown and the centers are set but still soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Enjoy the cookies warm or at room temperature.
