  • 1 cup (200 grams) granulated sugar
  • 2 tablespoons rose water
  • 1/2 cup (75 grams) chopped pistachios
  • Powdered sugar for glazing (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, ground cardamom, baking powder, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream the softened unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Mix in the rose water until well combined.
  5. Gradually add the dry ingredient mixture to the butter and sugar mixture, mixing on low speed until just combined. Be careful not to overmix.
  6. Gently fold in the chopped pistachios until evenly distributed throughout the dough.
  7. Using a tablespoon or cookie scoop, portion out the dough and roll it into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the palm of your hand.
  8. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden brown. The centers may look slightly underbaked, but they will firm up as they cool.
  9. Remove the cookies from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
