- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, whisk together rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine melted coconut oil, brown sugar, and granulated sugar. Mix until smooth and creamy.
- Add the egg (or flax egg) and vanilla extract to the wet mixture and stir until fully incorporated.
- Gradually mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Fold in grated carrots. If using, also fold in nuts and raisins or dried cranberries.
- Use a cookie scoop or two tablespoons to drop dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until edges are golden. The centers may look soft but will firm up as they cool.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
