  • 1/2 cup coconut oil, melted (or unsalted butter)
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg (or flax egg for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup walnuts or pecans, chopped (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine melted coconut oil, brown sugar, and granulated sugar. Mix until smooth and creamy.
  4. Add the egg (or flax egg) and vanilla extract to the wet mixture and stir until fully incorporated.
  5. Gradually mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
  6. Fold in grated carrots. If using, also fold in nuts and raisins or dried cranberries.
  7. Use a cookie scoop or two tablespoons to drop dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are golden. The centers may look soft but will firm up as they cool.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For vegan cookies, use a flax egg in place of a regular egg.
