Description

  • ¾ cup unsalted butter, softened

  • 1 cup buttermilk
  • ½ cup brewed chai tea (cooled)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, and cloves.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy using an electric mixer.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Alternately add the dry ingredients with the buttermilk and cooled chai tea, beginning and ending with the flour mixture. Mix just until combined.
  6. Divide the batter evenly between the prepared pans. Bake for 25–30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
