- 2 medium-sized zucchinis
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup fresh basil pesto
- 4 ounces cream cheese, softened
- 1/4 cup pine nuts, toasted
- Fresh basil leaves for garnish (optional)
Instructions
- Wash the zucchinis thoroughly and slice each zucchini lengthwise into thin strips, about 1/4 inch thick.
- Toss the zucchini strips with olive oil, salt, and pepper until evenly coated.
- Preheat a grill or grill pan over medium-high heat and grill the zucchini strips for about 2-3 minutes on each side until tender and marked.
- In a small bowl, combine softened cream cheese with basil pesto and mix until smooth.
- Spread a thin layer of the pesto cream cheese mixture over one side of each grilled zucchini strip, add toasted pine nuts, and roll them up.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 350°F for about 10 minutes.
- For freezing, wrap each roll-up tightly in plastic wrap and place in a freezer bag for up to a month.
