Description

  • 8 oz (226 g) cream cheese, softened
  • ½ cup (100 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) heavy whipping cream
  • 1 cup (150 g) mixed fresh fruits (such as strawberries, blueberries, kiwi, and peaches)
  • 4 large flour tortillas (or crepes)
  • ¼ cup (30 g) powdered sugar (to dust)

Instructions

  1. In a medium bowl, beat softened cream cheese and granulated sugar with an electric mixer until smooth and creamy. Add vanilla extract and mix well.
  2. In a separate bowl, whip heavy cream until stiff peaks form, about 3-4 minutes. Gently fold whipped cream into the cream cheese mixture without deflating it.
  3. Wash and cut mixed fruits into small bite-sized pieces, draining any excess juice.
  4. Lay a tortilla or crepe flat, spread a generous layer of cheesecake filling, leaving 1 inch at edges. Sprinkle fruits evenly on top.
  5. Roll the tortilla tightly, tucking in the sides, and place seam-side down. Repeat with remaining tortillas and filling.
  6. Refrigerate assembled roll ups for at least 30 minutes to set filling.
  7. Before serving, dust roll ups with powdered sugar and cut into bite-sized pieces. Arrange on a platter for serving.
