Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or line it with parchment paper.
- Cream together the softened butter and granulated sugar in a large mixing bowl with an electric mixer for 4-5 minutes until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the almond extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients in thirds, mixing gently to avoid overmixing.
- Fold in the pitted and halved cherries. If using cherry preserves, spoon them over the batter once it’s in the pan.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle sliced almonds on top for added crunch.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely. Decorate with powdered sugar, whipped cream, or serve as is.
