  • ½ cup sliced almonds (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Cream together the softened butter and granulated sugar in a large mixing bowl with an electric mixer for 4-5 minutes until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the almond extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients in thirds, mixing gently to avoid overmixing.
  5. Fold in the pitted and halved cherries. If using cherry preserves, spoon them over the batter once it’s in the pan.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Sprinkle sliced almonds on top for added crunch.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely. Decorate with powdered sugar, whipped cream, or serve as is.
