Description

Cherry Cheesecake Chimichangas are a delicious dessert fusion featuring a creamy cheesecake filling swirled with cherry pie filling, wrapped in a crispy tortilla, and fried to golden perfection. Finished with a dusting of cinnamon-sugar and optional toppings like whipped cream or chocolate chips, these sweet treats are perfect for indulgent moments.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar, divided
  • 1 cup cherry pie filling
  • 6 large flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/4 cup vegetable oil (for frying)
  • Whipped cream (optional, for serving)
  • Chopped nuts or chocolate chips (optional toppings)

Instructions

  1. In a medium bowl, mix softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  2. Gently fold in the cherry pie filling, being careful not to overmix to preserve cherry swirls.
  3. Lay out a tortilla, spoon about 1/4 cup of filling into the center, fold in the sides, and roll tightly. Repeat with remaining tortillas.
  4. In a skillet, heat vegetable oil over medium. Mix cinnamon and powdered sugar in a shallow dish.
  5. Fry each chimichanga seam-side down for 2–3 minutes per side until golden brown. Remove and roll in cinnamon-sugar mixture immediately.
  6. Allow to cool slightly, then serve warm with optional toppings like whipped cream, extra cherries, chopped nuts, or chocolate chips.

Notes

  • Dairy-free cream cheese can be used for a vegan alternative.
  • Gluten-free tortillas work well as a substitute.
  • Try other pie fillings like blueberry or raspberry for variation.
  • Add lemon zest or chocolate chips to the cheesecake filling for enhanced flavor.
