- 1 sheet of puff pastry, thawed
- 1 cup fresh or frozen cherries, pitted and chopped
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine cherries, granulated sugar, cornstarch, vanilla extract, lemon juice, and almond extract (if using). Let sit for 10 minutes.
- Lightly flour a clean surface and roll out the puff pastry to 1/8 inch thickness. Cut into 3-inch squares.
- Place 1 tablespoon of cherry filling in the center of each square. Fold corners over the filling and pinch to seal. Place on baking sheet.
- Brush each pastry with beaten egg for a golden finish.
- Bake for 15–20 minutes until golden and puffed. Let cool on the baking sheet before transferring to a wire rack.
- Dust with powdered sugar if desired. Serve warm or at room temperature.
