Ingredients

  • 1 cup raw pistachios, shelled
  • 1 cup rolled oats
  • 1/2 cup almond butter (or any nut butter of your choice)

  • 1/2 cup shredded coconut (unsweetened, for rolling)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Ingredients: Chop the dried cherries and half of the pistachios.
  2. Mix the Base: Combine all ingredients in a large mixing bowl until well mixed.
  3. Chill the Mixture: Refrigerate for about 30 minutes.
  4. Roll the Energy Balls: Roll tablespoon-sized portions into balls.
  5. Coat with Coconut: Roll each ball in shredded coconut.
