Description

Cherry Vanilla Bean Ice Cream is a delightful treat that combines the rich, creamy texture of ice cream with the sweet and tart flavor of cherries, perfect for hot summer days and celebrations.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 2 vanilla beans, split and seeds scraped
  • 2 cups fresh cherries, pitted and halved
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice (optional)

Instructions

  1. In a medium bowl, combine the pitted and halved cherries with the lemon juice (if using) and 1/4 cup of the sugar. Toss well and let them sit for about 30 minutes to macerate.
  2. In a saucepan over medium heat, combine the heavy cream, whole milk, the remaining 1/2 cup of sugar, and the salt. Add the split vanilla beans and their scraped seeds to the mixture. Stir occasionally until the sugar has dissolved and the mixture is heated through.
  3. Once the cream mixture is heated, remove it from the heat and let it steep for about 30 minutes.
  4. After steeping, remove the vanilla bean pods from the mixture. Pour the cream mixture into a bowl and cover it with plastic wrap. Refrigerate for at least 2 hours, or until completely chilled.
  5. After chilling, take the macerated cherries and blend them briefly until you achieve a chunky sauce.
  6. Pour the chilled cream mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  7. Once the ice cream reaches a soft-serve consistency, gently fold in the cherry sauce.
  8. Transfer the ice cream to an airtight container and freeze for at least 4 hours, or until firm.
  9. Scoop the cherry vanilla bean ice cream into bowls or cones and enjoy!
