- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 cup cheddar cheese, shredded
- 1 can (4 oz) diced green chilies, drained
- 1 cup buttermilk
- 2 large eggs
- 2 teaspoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 cup unsalted butter, melted (optional, for added richness)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt. Stir until well mixed.
- Stir in the shredded cheddar cheese and diced green chilies into the dry mixture.
- In another bowl, whisk together the buttermilk, eggs, and melted butter (if using) until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 15-20 minutes, or until golden brown and a toothpick inserted comes out clean.
