Instructions

  1. In a large bowl, mix the corn kernels, flour, baking powder, chili powder, lime juice, salt, and pepper to create a thick batter.
  2. In a large skillet, heat enough olive oil to cover the bottom of the pan over medium-high heat.
  3. Drop spoonfuls of the corn batter into the hot oil and fry for about 3-4 minutes on each side until golden brown and crispy.
  4. On a large serving platter, layer the corn fritters and sprinkle shredded cheddar cheese over them.
  5. Distribute diced avocado and chopped green onions over the cheese and drizzle with additional lime juice.
