Ingredients

- 4 cups fresh corn kernels (about 6–8 ears of corn, or use frozen corn)
- 1/4 cup lime juice (freshly squeezed for best flavor)
- 1 teaspoon chili powder (adjust to taste)
- 1 cup cotija cheese, crumbled
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 medium avocado, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the corn by cooking it (boil or grill) and let it cool.
- Make the dressing by whisking together lime juice, olive oil, chili powder, salt, and pepper.
- Combine corn, red onion, cilantro, and avocado in a large bowl, then add the dressing and toss gently.
- Sprinkle cotija cheese over the salad and fold it in carefully.
- Taste and adjust seasoning as needed.
- Serve immediately or refrigerate for up to an hour before serving.
Notes
