Ingredients

  • 4 cups fresh corn kernels (about 68 ears of corn, or use frozen corn)
  • 1/4 cup lime juice (freshly squeezed for best flavor)
  • 1 teaspoon chili powder (adjust to taste)
  • 1 cup cotija cheese, crumbled
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 medium avocado, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the corn by cooking it (boil or grill) and let it cool.
  2. Make the dressing by whisking together lime juice, olive oil, chili powder, salt, and pepper.
  3. Combine corn, red onion, cilantro, and avocado in a large bowl, then add the dressing and toss gently.
  4. Sprinkle cotija cheese over the salad and fold it in carefully.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or refrigerate for up to an hour before serving.
