Chocolate Caramallows With Marshmallow is a decadent dessert that layers fluffy homemade marshmallow, rich caramel, and a crisp chocolate coating for the perfect bite-sized indulgence.


Ingredients

  • 1 cup granulated sugar (for marshmallow)
  • 1/2 cup water
  • 1 tablespoon gelatin (unflavored)
  • 1/2 cup corn syrup
  • 1/2 teaspoon vanilla extract (for marshmallow)
  • 1/4 teaspoon salt (for marshmallow)
  • 1 cup granulated sugar (for caramel)
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt (for caramel)
  • 1 teaspoon vanilla extract (for caramel)
  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 1 tablespoon vegetable oil (optional, for thinning chocolate)

Instructions

  1. In a small saucepan, combine 1/2 cup water with gelatin and let it bloom for 5 minutes.
  2. In another saucepan, combine 1 cup granulated sugar, corn syrup, and salt. Heat over medium heat until sugar dissolves and the mixture begins to boil.
  3. Remove the sugar mixture from heat and stir in the bloomed gelatin until fully dissolved. Let cool slightly.
  4. Transfer to a mixing bowl and beat with an electric mixer on high until thick and fluffy, about 10 minutes. Add vanilla extract and mix briefly.
  5. Pour marshmallow mixture into a greased or parchment-lined 9×9 inch dish. Let set at room temperature for 4–6 hours.
  6. For the caramel, heat sugar and butter over medium heat until melted and amber in color. Carefully stir in cream, vanilla, and salt. Let cool slightly.
  7. Pour the cooled caramel over the set marshmallow layer and spread evenly. Let set for at least 2 hours.
  8. Melt chocolate chips in a microwave or double boiler. Stir in oil if desired for smoother coating.
  9. Cut the set marshmallow-caramel block into squares. Dip each square into melted chocolate and place on a parchment-lined tray.
  10. Let the chocolate set completely. Serve and enjoy.

Notes

  • Ensure the marshmallow layer is fully set before adding caramel.
  • Use a candy thermometer if desired for precise caramel temperature (around 245°F).
  • Add peppermint or almond extract for flavor variation.
  • Store in an airtight container for up to a week.
