- 1/2 cup heavy cream

- 1 1/2 cups semi-sweet or dark chocolate chips
- 1 tablespoon vegetable oil (optional, for thinning chocolate)
Instructions
- In a small saucepan, combine 1/2 cup water with gelatin and let it bloom for 5 minutes.
- In another saucepan, combine 1 cup granulated sugar, corn syrup, and salt. Heat over medium heat until sugar dissolves and the mixture begins to boil.
- Remove the sugar mixture from heat and stir in the bloomed gelatin until fully dissolved. Let cool slightly.
- Transfer to a mixing bowl and beat with an electric mixer on high until thick and fluffy, about 10 minutes. Add vanilla extract and mix briefly.
- Pour marshmallow mixture into a greased or parchment-lined 9×9 inch dish. Let set at room temperature for 4–6 hours.
- For the caramel, heat sugar and butter over medium heat until melted and amber in color. Carefully stir in cream, vanilla, and salt. Let cool slightly.
- Pour the cooled caramel over the set marshmallow layer and spread evenly. Let set for at least 2 hours.
- Melt chocolate chips in a microwave or double boiler. Stir in oil if desired for smoother coating.
- Cut the set marshmallow-caramel block into squares. Dip each square into melted chocolate and place on a parchment-lined tray.
- Let the chocolate set completely. Serve and enjoy.

- Use a candy thermometer if desired for precise caramel temperature (around 245°F).
