- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 quart vanilla ice cream (softened)
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 cup chocolate ganache (store-bought or homemade)
- Chocolate shavings or sprinkles (for garnish, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together. Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes. Stir in boiling water.
- Divide the batter between the prepared pans and bake for 30-35 minutes. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Place one cake layer on a serving platter. Spread half of the softened vanilla ice cream over it and drizzle half of the caramel sauce. Place the second layer on top and repeat with remaining ice cream and caramel. Freeze for at least 4 hours.
- Beat heavy whipping cream and powdered sugar until stiff peaks form for decorating.
- Remove the cake from the freezer and pour chocolate ganache over the top, allowing it to drip down the sides.
- Pipe or spread whipped cream around the edges and optionally sprinkle with chocolate shavings or sprinkles.
- Slice with a warm knife and serve immediately.

- Store in the freezer in an airtight container to prevent freezer burn.
- Let the cake sit at room temperature for a few minutes before slicing for easier cuts.
- For a dairy-free version, use coconut or almond milk ice cream.
- For a gluten-free version, use gluten-free flour.
