Description

Chocolate Cheesecake Bites are creamy, rich mini cheesecakes with a chocolate-infused filling and a buttery graham cracker crust, topped optionally with whipped cream and chocolate shavings. Perfect for parties or a personal treat.

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 7 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup semi-sweet chocolate chips, melted
  • 2 large eggs
  • A pinch of salt
  • 1/2 cup whipped cream (optional)
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. In a medium bowl, combine graham cracker crumbs and granulated sugar. Stir in melted butter until mixture resembles wet sand.
  3. Press the crust mixture into the bottom of each muffin liner and pack firmly. Set aside.
  4. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Mix in the melted chocolate until fully incorporated and the mixture is evenly colored.
  6. Add eggs one at a time, mixing just until combined. Add a pinch of salt and mix lightly.
  7. Spoon cheesecake batter over the crusts, filling each about 3/4 full.
  8. Bake for 18–20 minutes, until edges are set and centers slightly jiggle. Let cool completely.
  9. Chill in the refrigerator for at least 2 hours or overnight.
  10. Before serving, top with whipped cream and garnish with chocolate shavings or cocoa powder if desired.
