- ½ cup unsalted butter, cold and cubed
- ¼ teaspoon salt
- 2 to 4 tablespoons ice water
- 1 cup heavy whipping cream
- 1 cup semi-sweet chocolate chips

- ¾ cup powdered sugar
- 2 large eggs
- 2 cups fresh or frozen cherries, pitted
- ½ cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons lemon juice
- 1 tablespoon butter
Instructions
- In a bowl, combine flour and salt. Cut in the butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Wrap and chill for 30 minutes.
- Preheat oven to 375°F (190°C). Roll out dough, fit into a 9-inch pie pan, prick bottom, and bake for 20–25 minutes until lightly golden. Cool completely.
- In a saucepan, heat cream until just boiling. Remove from heat and stir in chocolate chips until smooth. Stir in vanilla extract and let cool slightly.
- Whisk eggs and powdered sugar in a bowl until smooth. Slowly add chocolate mixture while whisking. Pour into cooled crust and smooth the top.
- Bake at 350°F (175°C) for 25–30 minutes until set but slightly jiggly. Let cool completely.
- In a saucepan, combine cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, about 5–7 minutes. Stir in butter and cool slightly.
- Spoon cherry topping over cooled chocolate filling. Chill pie for at least 4 hours or overnight before serving.

- Use frozen cherries if fresh ones aren’t available—just thaw and drain them first.
- Chill the pie thoroughly for a clean slice and rich texture.
