  • ½ cup unsalted butter, cold and cubed
  • ¼ teaspoon salt
  • 2 to 4 tablespoons ice water
  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • ¾ cup powdered sugar
  • 2 large eggs
  • 2 cups fresh or frozen cherries, pitted
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1 tablespoon butter

Instructions

  1. In a bowl, combine flour and salt. Cut in the butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Wrap and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out dough, fit into a 9-inch pie pan, prick bottom, and bake for 20–25 minutes until lightly golden. Cool completely.
  3. In a saucepan, heat cream until just boiling. Remove from heat and stir in chocolate chips until smooth. Stir in vanilla extract and let cool slightly.
  4. Whisk eggs and powdered sugar in a bowl until smooth. Slowly add chocolate mixture while whisking. Pour into cooled crust and smooth the top.
  5. Bake at 350°F (175°C) for 25–30 minutes until set but slightly jiggly. Let cool completely.
  6. In a saucepan, combine cherries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened, about 5–7 minutes. Stir in butter and cool slightly.
  7. Spoon cherry topping over cooled chocolate filling. Chill pie for at least 4 hours or overnight before serving.

Notes

  • Use frozen cherries if fresh ones aren’t available—just thaw and drain them first.
  • Chill the pie thoroughly for a clean slice and rich texture.
  • Garnish with whipped cream or chocolate shavings for added flair.
