  • Β½ cup granulated sugar
  • Β½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Β½ cup buttermilk
  • Β½ cup vegetable oil

Instructions

  1. Preheat oven to 350Β°F (175Β°C).
  2. Melt butter in a 9-inch round cake pan over medium heat. Sprinkle brown sugar evenly over the butter. Arrange cherries evenly on top.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  4. In another bowl, beat granulated sugar, brown sugar, eggs, and vanilla extract on medium-high speed until light and fluffy (2-3 minutes). Slowly mix in buttermilk and vegetable oil.
  5. Gradually fold dry ingredients into wet ingredients until just combined; small lumps are okay.
  6. Pour batter evenly over the cherry topping in the pan.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool cake in pan for 10 minutes, then invert onto serving platter to display cherries on top.
  9. Serve warm or at room temperature.
