Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish.
- Mash bananas until smooth. Mix in melted butter and granulated sugar until combined.
- Beat in eggs one at a time, then add vanilla extract and mix well.
- Sift together flour, cocoa powder, baking soda, and salt. Gradually add to banana mixture, stirring gently until just combined.
- Fold in semi-sweet chocolate chips evenly.
- Pour batter into baking dish and bake for 25-30 minutes until a toothpick comes out with moist crumbs.
- Cool brownies completely in the dish.
- Melt chocolate chips with coconut oil until smooth.
- Top each with sliced bananas, cover completely with melted chocolate, cut into slices, place on a parchment-lined sheet, and refrigerate until set.
