Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish.
  2. Mash bananas until smooth. Mix in melted butter and granulated sugar until combined.
  3. Beat in eggs one at a time, then add vanilla extract and mix well.
  4. Sift together flour, cocoa powder, baking soda, and salt. Gradually add to banana mixture, stirring gently until just combined.
  5. Fold in semi-sweet chocolate chips evenly.
  6. Pour batter into baking dish and bake for 25-30 minutes until a toothpick comes out with moist crumbs.
  7. Cool brownies completely in the dish.
  8. Melt chocolate chips with coconut oil until smooth.
  9. Top each with sliced bananas, cover completely with melted chocolate, cut into slices, place on a parchment-lined sheet, and refrigerate until set.
