Chocolate-Dipped Peanut Butter Protein Oat Cups are a delightful treat that combines rich chocolate with creamy peanut butter, packed with protein, making them a perfect snack for any time of the day.


Ingredients

  • 2 cups rolled oats (about 180 g)
  • 1 cup peanut butter (about 250 g, creamy or crunchy)
  • 1/2 cup protein powder (about 60 g, any flavor you prefer)
  • 1/3 cup honey (about 113 g, or maple syrup for a vegan option)
  • 1 cup dark chocolate (about 170 g, chopped or chocolate chips)
  • 1 teaspoon vanilla extract (about 5 ml)
  • 1/4 teaspoon salt (about 1 g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, combine the rolled oats, protein powder, and salt. Stir until well mixed.
  3. In another bowl, mix the peanut butter, honey, and vanilla extract until smooth.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir until evenly coated.
  5. Evenly distribute the oat mixture into the prepared muffin tin, pressing down firmly.
  6. Bake for 15-18 minutes, or until the edges are golden brown. Let cool in the tin for 10 minutes before transferring to a wire rack.
  7. Melt the dark chocolate in a microwave-safe bowl or double boiler until smooth.
  8. Dip the top of each cooled oat cup into the melted chocolate and place them back on a wire rack or parchment-lined baking sheet.
  9. Allow the chocolate to set at room temperature or refrigerate for 15-20 minutes.
  10. Serve and enjoy as a healthy snack or post-workout treat.
