Description
Chocolate-dipped raspberry meringue cookies are a delightful treat that combines the sweetness of meringue with the tartness of raspberries, offering a unique texture that melts in your mouth.

- 3 large egg whites
- 3/4 cup (150 g) granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/2 teaspoon raspberry extract
- A few drops of pink food coloring (optional)
- 4 oz (113 g) dark chocolate, chopped
- 1/4 cup crushed freeze-dried raspberries (for garnish)
- A pinch of salt (to taste)
Instructions
- Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.
- In a clean, dry mixing bowl, add the egg whites and a pinch of salt. Beat on medium speed until frothy.
- Add the cream of tartar and continue to beat until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, while beating on high speed until glossy and stiff peaks form (about 5-7 minutes).
- Gently fold in the vanilla extract, raspberry extract, and food coloring until combined.
- Transfer the meringue to a piping bag fitted with a large star tip and pipe small mounds onto the baking sheets.
- Bake for 1 hour, then turn off the oven and leave the meringues inside to cool for 1-2 hours.
- Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip the bottom of each meringue into the melted chocolate and place back on parchment paper.
- Sprinkle crushed freeze-dried raspberries on top of the chocolate while still wet. (optional)
- Allow the chocolate to set at room temperature or refrigerate for 15-20 minutes.
- Serve the cookies on a plate and enjoy!

- For a vegan version, use aquafaba instead of egg whites.
