  • 1/4 cup coconut oil
  • 1 cup dark or semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional toppings: dried fruits, coconut flakes, sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, chopped nuts, and seeds. Stir well.
  3. In a small saucepan over low heat, mix the honey (or maple syrup), coconut oil, salt, and vanilla extract until smooth.
  4. Pour the wet mixture over the dry ingredients and mix until evenly coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture evenly, pressing down gently.
  6. Bake for 15–20 minutes, or until golden brown at the edges.
  7. While baking, melt the chocolate chips using a microwave or double boiler.
  8. Remove granola from oven and drizzle or spread the melted chocolate over it.
  9. Let it cool at room temperature for 30–60 minutes until fully set.
