- 1 cup dark or semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Optional toppings: dried fruits, coconut flakes, sea salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, chopped nuts, and seeds. Stir well.
- In a small saucepan over low heat, mix the honey (or maple syrup), coconut oil, salt, and vanilla extract until smooth.
- Pour the wet mixture over the dry ingredients and mix until evenly coated.
- Line a baking sheet with parchment paper and spread the granola mixture evenly, pressing down gently.
- Bake for 15–20 minutes, or until golden brown at the edges.
- While baking, melt the chocolate chips using a microwave or double boiler.
- Remove granola from oven and drizzle or spread the melted chocolate over it.
- Let it cool at room temperature for 30–60 minutes until fully set.
- Break into pieces or cut into squares and serve or store.
