Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, almond flour, cocoa powder, salt, melted coconut oil, honey or maple syrup, and vanilla extract; mix well.
- Scoop a handful of the mixture and firmly press it into a muffin tin to form cups about ¼ inch thick; optionally sprinkle chocolate chips into the base.
- Bake for 12-15 minutes until edges are firm but centers are slightly soft; cool completely.
- In a separate bowl, mix peanut butter, honey or maple syrup, and vanilla extract until smooth; add almond milk or water if needed for a softer consistency.
- Remove granola cups from the muffin tin and fill each with peanut butter filling.
- Optionally, melt additional chocolate chips and drizzle over the filled cups for decoration.
- Refrigerate for 30 minutes to firm up the filling before serving.
