Ingredients

  • ½ cup almond flour
  • ½ cup cocoa powder
  • ½ cup honey or maple syrup
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • ½ cup chocolate chips (optional)
  • 1 cup creamy peanut butter (or any nut/seed butter)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, almond flour, cocoa powder, salt, melted coconut oil, honey or maple syrup, and vanilla extract; mix well.
  3. Scoop a handful of the mixture and firmly press it into a muffin tin to form cups about ¼ inch thick; optionally sprinkle chocolate chips into the base.
  4. Bake for 12-15 minutes until edges are firm but centers are slightly soft; cool completely.
  5. In a separate bowl, mix peanut butter, honey or maple syrup, and vanilla extract until smooth; add almond milk or water if needed for a softer consistency.
  6. Remove granola cups from the muffin tin and fill each with peanut butter filling.
  7. Optionally, melt additional chocolate chips and drizzle over the filled cups for decoration.
  8. Refrigerate for 30 minutes to firm up the filling before serving.
