- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons peppermint extract
- 2 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chocolate chips (semi-sweet or dark)
- 1 cup crushed mint candies or peppermint candies (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Add eggs one at a time, mixing well after each. Stir in peppermint extract.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in chocolate chips and crushed mint candies (if using).
- Drop rounded tablespoons of dough onto a parchment-lined baking sheet, leaving 2 inches between cookies.
- Bake for 10–12 minutes, until edges are set and centers are slightly soft.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
