- 1 cup (200 g) granulated sugar
- 1 cup (100 g) unsweetened cocoa powder
- 1 cup (240 ml) dairy-free chocolate milk (or regular)
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a medium saucepan, whisk together the water, granulated sugar, and unsweetened cocoa powder over medium heat until the sugar fully dissolves.
- Bring to a simmer and cook for 3–5 minutes, stirring frequently, until the mixture thickens slightly. Remove from heat.
- Let the mixture cool for 5 minutes. Then whisk in the chocolate milk, vanilla extract, and a pinch of salt until smooth.
- Transfer the mixture to a bowl or jug, cover with plastic wrap touching the surface, and refrigerate for at least 2 hours until fully chilled.
- Pour the chilled mixture into an ice cream maker and churn for 20–30 minutes, or until it reaches a soft-serve consistency.
- Transfer to an airtight container, smooth the top, and freeze for at least 2 hours before serving.
Notes
- For deeper flavor, add a teaspoon of espresso powder.
- For a spicy twist, add a pinch of chili powder or cayenne.
- Use almond or oat milk for a fully vegan version.
- Chill the base thoroughly before churning for best results.
