Description

This indulgent Chocolate Strawberry Cheesecake features a buttery graham cracker crust, a rich chocolate and strawberry-infused cream cheese filling, and is topped with luscious chocolate ganache and fresh strawberry slices. It’s the perfect dessert for special occasions or when you want to impress guests with a decadent treat.

  • 24 oz Cream Cheese
  • 1 cup Granulated Sugar
  • 1 cup Sour Cream
  • 4 Eggs
  • 2 tsp Vanilla Extract
  • 1/2 cup Melted Chocolate (dark or semi-sweet)
  • 2 cups Fresh Strawberries, sliced
  • 1 1/2 cups Graham Cracker Crumbs
  • 5 tbsp Melted Butter
  • 1/2 cup Heavy Cream (for ganache)
  • 1/2 cup Dark Chocolate, chopped (for ganache)
  • 1 tsp Vanilla Extract (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust.
  3. Blind bake the crust for 10-15 minutes. Let it cool.
  4. In a large bowl, beat cream cheese until smooth. Add sugar and mix well.
  5. Add sour cream, eggs (one at a time), and vanilla extract. Mix until creamy.
  6. Fold in melted chocolate and gently mix in puréed fresh strawberries (optional for extra flavor).
  7. Pour the filling into the prepared crust.
  8. Wrap the pan in foil and place it in a larger pan filled halfway with hot water (water bath).
  9. Bake at 325°F (165°C) for 55-65 minutes, or until the center is almost set.
  10. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Then chill in the fridge for at least 4 hours or overnight.
  11. For ganache, heat cream until simmering. Pour over chopped chocolate and let sit 1 minute. Stir until smooth. Add vanilla.
  12. Drizzle cooled ganache over the chilled cheesecake. Top with fresh sliced strawberries before serving.
