- 24 oz Cream Cheese
- 1 cup Granulated Sugar
- 1 cup Sour Cream
- 4 Eggs
- 2 tsp Vanilla Extract
- 1/2 cup Melted Chocolate (dark or semi-sweet)
- 2 cups Fresh Strawberries, sliced
- 1 1/2 cups Graham Cracker Crumbs
- 5 tbsp Melted Butter
- 1/2 cup Heavy Cream (for ganache)
- 1/2 cup Dark Chocolate, chopped (for ganache)
- 1 tsp Vanilla Extract (for ganache)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust.
- Blind bake the crust for 10-15 minutes. Let it cool.
- In a large bowl, beat cream cheese until smooth. Add sugar and mix well.
- Add sour cream, eggs (one at a time), and vanilla extract. Mix until creamy.
- Fold in melted chocolate and gently mix in puréed fresh strawberries (optional for extra flavor).
- Pour the filling into the prepared crust.
- Wrap the pan in foil and place it in a larger pan filled halfway with hot water (water bath).
- Bake at 325°F (165°C) for 55-65 minutes, or until the center is almost set.
- Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Then chill in the fridge for at least 4 hours or overnight.
- For ganache, heat cream until simmering. Pour over chopped chocolate and let sit 1 minute. Stir until smooth. Add vanilla.
- Drizzle cooled ganache over the chilled cheesecake. Top with fresh sliced strawberries before serving.
