Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar, plus extra for dusting
  • 1 tablespoon ground cinnamon, plus extra for dusting
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups of your favorite ice cream

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In another bowl, whisk together the melted butter, eggs, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until a thick dough forms.
  3. Transfer the churro dough to a piping bag fitted with a large star tip. Pipe small rounds (about 2 inches in diameter) onto the prepared baking sheet, leaving space between each one.
  4. Bake in the preheated oven for 15-20 minutes, or until the churros are golden brown and firm to the touch. Remove from the oven and let them cool slightly on the baking sheet.
  5. While the churros are cooling, mix together the remaining sugar and cinnamon in a shallow dish.
  6. Once the churros are cool enough to handle, roll each one in the cinnamon sugar mixture until fully coated.
  7. Take one churro round, place a generous scoop of your favorite ice cream on top, and then gently press another churro round on top to create a sandwich. Repeat with the remaining churros and ice cream.
  8. Serve the churro ice cream sandwiches immediately or freeze for about 30 minutes to firm them up before serving.

  • For a dairy-free option, use vegan butter and dairy-free ice cream.
  • Gluten-free flour can replace all-purpose flour for a gluten-free version.
  • Store leftover churros in an airtight container at room temperature for up to two days.
