Description

  • 1/2 teaspoon ground cinnamon (for topping)
  • Chocolate sauce or condensed milk (for serving)

Instructions

  1. In a large mixing bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
  2. In another bowl, whisk buttermilk, egg, vegetable oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  4. Preheat a nonstick skillet over medium-low heat and lightly coat it with vegetable oil.
  5. Pour a scant 1/4 cup of batter onto the skillet and cook for about 2 minutes, until bubbles form and the bottom is golden brown. Flip and cook for 30 seconds to 1 minute more.
  6. Repeat with the remaining batter.
  7. Mix 1/4 cup sugar with 1/2 teaspoon cinnamon in a small bowl for the topping.
  8. Brush cooked pancakes with melted butter (optional) and coat with cinnamon sugar.
  9. Serve warm, drizzled with chocolate sauce or condensed milk.
