Instructions
- In a large mixing bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
- In another bowl, whisk buttermilk, egg, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Preheat a nonstick skillet over medium-low heat and lightly coat it with vegetable oil.
- Pour a scant 1/4 cup of batter onto the skillet and cook for about 2 minutes, until bubbles form and the bottom is golden brown. Flip and cook for 30 seconds to 1 minute more.
- Repeat with the remaining batter.
- Mix 1/4 cup sugar with 1/2 teaspoon cinnamon in a small bowl for the topping.
- Brush cooked pancakes with melted butter (optional) and coat with cinnamon sugar.
- Serve warm, drizzled with chocolate sauce or condensed milk.
