Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  2. In a separate bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  3. In another small bowl, mix the cinnamon spice blend: ground cinnamon, brown sugar, nutmeg, and ginger.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined. Do not overmix.
  5. Let the batter rest for a few minutes to allow the flour to absorb the liquid.
  6. Preheat a griddle or nonstick skillet to 350°F (177°C).
  7. Lightly grease the cooking surface and pour 1/4 cup of batter per pancake onto the hot surface.
  8. Cook for 2-3 minutes, until bubbles form on the surface, then flip and cook an additional 1-2 minutes until golden brown.
  9. Serve warm with cream cheese glaze, maple syrup, chopped nuts, or fresh berries.
