Instructions
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, cream together softened butter and granulated sugar using an electric mixer until light and fluffy (2-3 minutes).
- Add egg and vanilla extract; mix until well combined.
- Gradually add dry ingredients into the wet ingredients and mix until just combined. Do not overmix.
- Cover dough and chill in the refrigerator for at least 1 hour, or overnight for enhanced flavor.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll chilled dough into balls using a cookie scoop or tablespoon. Place on baking sheet about 2 inches apart. Slightly flatten each ball for uniform baking.
