Instructions

  1. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.
  2. In a large mixing bowl, cream together softened butter and granulated sugar using an electric mixer until light and fluffy (2-3 minutes).
  3. Add egg and vanilla extract; mix until well combined.
  4. Gradually add dry ingredients into the wet ingredients and mix until just combined. Do not overmix.
  5. Cover dough and chill in the refrigerator for at least 1 hour, or overnight for enhanced flavor.
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  7. Roll chilled dough into balls using a cookie scoop or tablespoon. Place on baking sheet about 2 inches apart. Slightly flatten each ball for uniform baking.
  8. Bake for 10-12 minutes until edges are set and centers look slightly underbaked.

  10. While cooling, prepare icing: whisk together powdered sugar, milk, vanilla extract, and salt until smooth. Adjust consistency as needed.
  11. Drizzle icing over cooled cookies using a spoon or piping bag. Allow icing to set before serving.
