Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, ground cinnamon, and salt until well combined.
- In a separate bowl, beat the eggs. Add the milk, vanilla extract, and melted unsalted butter, mixing until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula until just combined.
- In a small bowl, mix together the additional granulated sugar and ground cinnamon for the swirl filling.
- Spoon about 1 tablespoon of muffin batter into each muffin cup. Sprinkle a teaspoon of the cinnamon sugar mixture on top of the batter. Then, add another tablespoon of muffin batter on top of the cinnamon sugar layer.
- Using a toothpick or a skewer, gently swirl the batter and cinnamon sugar together in each muffin cup to create a marbled effect.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.
Notes
- Store your muffins in an airtight container at room temperature for up to three days.
- If freezing, wrap each muffin in plastic wrap and place them in a freezer bag. They can be frozen for up to three months.
