- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
- Add the vanilla extract and mix until incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined.
- Roll out half the dough into a rectangle, sprinkle with a cinnamon-sugar mix (2 tbsp sugar + 1 tsp cinnamon), and roll tightly into a log to form a swirl. Repeat with the other half.
- Wrap both logs and refrigerate for at least 30 minutes.
- Slice the chilled dough into 1/4-inch thick rounds and place on the prepared baking sheet.
- Bake for 10–12 minutes until edges are lightly golden and centers are set.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- For a fun twist, drizzle with icing made from powdered sugar and milk.
- Chill the dough for thicker cookies.
