Description

Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter (for cooking)
  • 1 cup crushed Cinnamon Toast Crunch cereal (for coating)
  • Additional sugar and cinnamon (for sprinkling, optional)

Instructions

  1. Trim the crusts off each slice of bread to create a uniform rectangle.
  2. Using a rolling pin, gently flatten each slice of bread.
  3. In a small bowl, mix together the sugar and ground cinnamon, setting aside a tablespoon for later.
  4. Sprinkle a small amount of the cinnamon-sugar mixture over each slice of flattened bread and roll tightly.
  5. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon-sugar mixture.
  6. Dip each roll-up into the egg mixture, then roll in the crushed cereal until fully covered.
  7. Melt butter in a skillet over medium heat and cook the roll-ups seam side down for 2-3 minutes on each side until golden brown and crispy.
