- 1 cup crushed Cinnamon Toast Crunch cereal (for coating)

Instructions
- Trim the crusts off each slice of bread to create a uniform rectangle.
- Using a rolling pin, gently flatten each slice of bread.
- In a small bowl, mix together the sugar and ground cinnamon, setting aside a tablespoon for later.
- Sprinkle a small amount of the cinnamon-sugar mixture over each slice of flattened bread and roll tightly.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon-sugar mixture.
- Dip each roll-up into the egg mixture, then roll in the crushed cereal until fully covered.
- Melt butter in a skillet over medium heat and cook the roll-ups seam side down for 2-3 minutes on each side until golden brown and crispy.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
