Description

Ingredients

  • 3 large eggs

  • 1 tablespoon orange zest (from about 1 orange)
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk (or plain yogurt)
  • ½ cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh orange juice
  • Candied orange and lemon slices (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the olive oil and sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, sift together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk.
  6. Fold in the citrus zests and vanilla extract.
  7. Pour the batter into the prepared pan and bake for about 30-35 minutes, or until a toothpick comes out clean.
  8. Let the cake cool in the pan for a few minutes before transferring it to a wire rack.
  9. Prepare the glaze by whisking together the powdered sugar, lemon juice, and orange juice until smooth.
  10. Drizzle the glaze over the cake and garnish with candied citrus slices.
