- 1 tablespoon orange zest (from about 1 orange)
- 1 teaspoon vanilla extract
- ½ cup buttermilk (or plain yogurt)
- ½ cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh orange juice
- Candied orange and lemon slices (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together the olive oil and sugar until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the buttermilk.
- Fold in the citrus zests and vanilla extract.
- Pour the batter into the prepared pan and bake for about 30-35 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for a few minutes before transferring it to a wire rack.
- Prepare the glaze by whisking together the powdered sugar, lemon juice, and orange juice until smooth.
- Drizzle the glaze over the cake and garnish with candied citrus slices.
