- 4 ripe peaches, pitted and chopped
- 2 tablespoons honey (adjust based on sweetness preference)
- 1 cup Greek yogurt (plain or vanilla)
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon vanilla extract
Instructions
- Prepare the Peaches: Start by washing the fresh peaches thoroughly. Cut them in half, remove the pits, and chop them into small pieces. If you prefer a smoother texture, you can peel the peaches, but leaving the skin on adds extra nutrients and color.
- Blend the Mixture: In a blender or food processor, combine the chopped peaches, honey, Greek yogurt, lemon juice, and vanilla extract. Blend until the mixture is smooth and creamy. If you like a bit of texture, you can blend until just combined, leaving some small peach chunks.
- Taste and Adjust: Taste the mixture and adjust the sweetness if necessary. If you want it sweeter, add a little more honey and blend again.
- Pour into Molds: Carefully pour the peach mixture into popsicle molds, leaving a little space at the top for expansion as they freeze. If you don’t have popsicle molds, you can use small paper cups and insert wooden sticks once the mixture is partially frozen (about 1-2 hours).
- Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid. For best results, leave them overnight.
- Unmold and Serve: To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds to loosen them. Gently pull the popsicles out. Serve immediately and enjoy the refreshing taste of summer!

- Store in an airtight container in the freezer for up to 2 weeks.
- For a vegan option, substitute honey with maple syrup and Greek yogurt with coconut yogurt.
- Using ripe peaches enhances the sweetness and flavor.
