  • 1 teaspoon all-purpose flour (for dusting chocolate chips)
  • 1/2 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup salted sweet cream butter, melted and cooled
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup mini semi-sweet chocolate chips
  • 2 1/2 cups sweetened coconut flakes
  • 2/3 cup sweetened condensed milk
  • 1 teaspoon vanilla extract (for coconut layer)
  • 1/4 teaspoon salt (for coconut layer)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper and spray lightly with nonstick spray.
  2. In a bowl, whisk together 1 cup flour, cocoa powder, and 1/4 tsp salt. Toss chocolate chips with 1 tsp flour in a separate bowl.
  3. In another bowl, whisk melted butter, sugar, eggs, and vanilla. Stir in the flour mixture until just combined. Fold in chocolate chips.
  4. Spread half the batter in the dish. Mix coconut flakes, condensed milk, 1 tsp vanilla, and 1/4 tsp salt. Spread coconut mixture over brownie layer. Top with remaining batter.
  5. Bake for 35–40 minutes, until a toothpick comes out with moist crumbs. Cool completely before slicing into squares.

Notes

  • For a gluten-free version, use a 1:1 gluten-free baking flour blend.
  • Substitute butter with coconut oil for a dairy-free option.
  • Use unsweetened coconut for a less sweet version and add a bit more sugar to the batter.
  • Try dark or white chocolate chips for variation.
